After dinner last night I noticed that there was an impressive pink sky. Unfortunately by the time that I photographed it, it was already a little dark. The savoury bread pudding however, was a hit. I will be making it again. So if you are interested this is how I did it.
Ingredients
Small loaf
Milk
Red onions
Courgette
Chilies
Garlic
2eggs
Brown sugar
Balsamic vinegar
Grated mixed cheeses ( here I can buy bags ready prepared of 3 cheeses)
Mixed herbs
Salt and pepper
Instructions
1: Roughly chop the bread, almost cover with milk. Add mixed herbs, salt and pepper and leave to soak. ( I left it over night).
2: create caramelized onions, fry gently as they start to soft and brown add the sugar and a little balsamic vinegar.
3: in another pan fry any other vegetables that you have to hand and wish to add, I had chilies and courgette and some garlic.
4: combine all the ingredients.
5: place in an oven proof dish and bake in a medium hot oven for approximately half an hour.


A lot of my cooking is ad-hoc. I use whatever is to hand and am not particularly worried about weighing and measuring. However in the past I know people have asked how I have made things, so hopefully this will help. It made 4 portions, so we are eating it again this evening. Last night we ate it warm with some peas and carrots, tonight it will be cold with salad.
This morning the sun was out and everything looks lovely.We started the morning at the market. Nancy seemed to want to come with us, so she came on an outing as only and special dog. She seemed to enjoy herself and was more than happy to lie under the table whilst we had a coffee.


For some time I have wanted to do further work to the gîte d’étape. We keep trying to work out what we can do to make it more appealing. I hadn’t planned that we would be starting anything today but after a conversation with a friend this morning I realized that we need to get on with things.
So after a further walk around the gîte we decided some of what needs doing and how we’re going to do it. So off we went to Brest for a trip to collect some of the necessary materials. This means that tomorrow morning we can make a start without having to go anywhere else first. At the moment I cannot really provide pictures of the kitchen because it really doesn’t look that good. By Monday morning I think it will be looking completely different. I’ll take some before photos tomorrow.
